Cupcake towers are out, and nakedness is in! We’re talking about wedding cakes FYI… Join us as we split tiers with three of the industry’s top bakers and find out the wedding cake trends for 2018. Grab a cuppa and prepare to feel hungry!

What’s hot for this year’s cake loving couples?

White Rose Cake Design – There’s still a lot of love for the semi-naked cake, which is a really versatile style of cake. It can be dressed up for a more formal wedding and dressed in a more rustic style for a more laid-back wedding. Dessert tables are also becoming popular, made up of one main cake and a couple of smaller ones displayed with other desserts. These make an amazing display! I’m also seeing a return to traditional sugar flowers on cakes.

Blossom Tree Cake Company – Marble icing tiers and metallics continue to feature strongly in wedding cake designs for 2018. Gold, rose gold and silver metallic finishes or detailing, striking champagne and silver pearlescent lustre finishes.

Organic Wedding Cake Co. – Naked wedding cakes are still proving to be very popular, we’ve been making them since 2012 and 90% of enquiries are still for this style of cake. They have evolved over the last couple of years, with couples liking the semi-naked look which is neater, not too rustic.

What’s not? Is there anything couples should avoid?

White Rose Cake Design – I’m not seeing as many orders for cupcake towers for weddings!

Blossom Tree Cake Company – Choosing your wedding cake design is a hugely personal thing and we love working with couples to create stunning showpiece cakes. Each cake maker has their own style though. The best advice we can give is to choose a cake designer whose designs best reflect the style you’re looking to achieve.

Organic Wedding Cake Co. – I don’t think there’s anything couples should avoid, at The Organic Wedding Cake Company we like to keep things simple, there’s not much that can go wrong with our style of cake, but it still takes time and skill to get them looking so perfect! If you are looking for a wedding cake with a huge amount of detail then make sure the cake maker can pull it off, if you’ve ever seen Cake Wrecks you’ll know what I mean.

Has The Great British Bake Off been good for wedding cake designers or has it increased the number of cake disasters as people try and DIY it?

White Rose Cake Design – There has been an increase in the number of brides and grooms who choose to DIY a lot of their wedding on the whole, so the DIY cake would be included in that. I’ve had a few couples who have come to me quite late on as they had decided to DIY the cake and then realised the work involved! There is absolutely nothing wrong with doing the cake yourself or having a friend or relative do it, but be realistic about yours or their skill level and manage your expectations accordingly.

Blossom Tree Cake Company – We love watching the Great British Bake Off. It’s great to see people from all walks of life getting creative and trying out really interesting and imaginative flavours and fillings. I don’t think it has increased the number of wedding cake disasters. We receive a lot of great feedback about how absolutely perfect our wedding cakes are. If anything, The Great British Bake Off probably makes people appreciate what goes into making a really great cake when they see and taste one!

Organic Wedding Cake Co. – I only ever watched the first series, it’s not really my thing but I suspect plenty of people have thought it’s easy to make a wedding cake, what can go wrong?  I do get last minute enquiries where I’m told the family member or friend who was making the wedding cake has changed their mind, once people start considering what’s involved they soon realise it takes a professional to do the job well!

Is there one mistake that most couples make when choosing a wedding cake?

White Rose Cake Design – The most common would be thinking they need to have a portion of cake for every guest at the wedding. I find that it’s best to cater for around 80% of the guests, and even then, you’ll probably still have some left over for the next day.

Blossom Tree Cake Company – Planning your wedding is a really exciting thing and when it comes to your cake design, and the cake tasting, one to get especially excited about! With so many beautiful cake designs to choose from, it can be difficult to narrow down the range of design ideas you’d like to incorporate. When we meet with couples for consultations and they have too many design ideas, we help narrow that down to what will work best and put the right combinations together to create a really elegant and striking design. The old adage ‘less is more’ really rings true in wedding cake design!

Organic Wedding Cake Co. – The most common thing I hear after a wedding is they wish they had ordered a bigger cake as it was all gone by the end of the night, it’s not uncommon for the bride and groom to miss out completely on their wedding cake as they have been busy milling about, socialising and having photos taken and in the meantime hungry guests have scoffed the lot!

What are the basic types of cake people can choose from?

White Rose Cake Design – White Rose Cake Design has a wide range of flavours, with the most popular being vanilla with vanilla buttercream and strawberry preserve, chocolate with chocolate buttercream, lemon with lemon curd and lemon buttercream and toffee with salted caramel and vanilla buttercream.

Blossom Tree Cake Company – We specialise in filled sponge cakes and moist fruit cakes. Our most popular flavours and fillings with brides and grooms are: Zesty Lemon, White Chocolate & Passionfruit, Chocolate Salted Caramel, Classic Victoria.

Organic Wedding Cake Co. – We offer a wide range of cake flavours with multiple filling options and they all work very well for naked, semi naked and buttercream and ganache covered cakes.  We also make most of our cakes as gluten free, dairy free, egg free and vegan.

Is there anything couples should look out for when finding the right wedding baker/cake designer?

White Rose Cake Design – My advice would be to do your research! Have a look at the online reviews, have a look at the galleries and go along for a consultation. It’s important that you get along well with your cake designer and the consultation is a chance to see whether you do (and whether the cake tastes good or not!)

Blossom Tree Cake Company –Choose a cake maker in your region, within an hour or so of your venue. Check out their social media pages – are they regularly showcasing their fantastic cakes and receiving great reviews and ratings?

Organic Wedding Cake Co. – Make sure the person has a portfolio for you to look through, and reviews either on social media, cards etc. Go and taste cake samples, you want the cake to taste as good as it looks!

Do you take your ‘work’ (aka cake) home with you?

White Rose Cake Design – I work from home, so I have no choice in this unfortunately!

Blossom Tree Cake Company – Our Harrogate studio is also our home and I absolutely love designing and baking wedding cakes, so switching off doesn’t come easily! We do though make sure we take time out whenever we can, to catch up with friends, get away on our travels or just relax.

Organic Wedding Cake Co. – Only the offcuts and I usually have to fight my husband for those!

You must have been around lots of weddings, what is the best wedding day advice for brides?

White Rose Cake Design – Don’t sweat the small stuff. You will have spent months (maybe even years) planning your wedding, but things still may not run to plan on the day. Just go with it – it’s what the occasion means that is important, not whether the table centres are in the exact same configuration for example.

Blossom Tree Cake Company – Make sure you eat and enjoy the day – it’ll go really quickly! In particular, make sure you get to try a piece of your wedding cake. We often hear couples didn’t get to eat any as they were busy mingling while their guests were tucking in and finished it all off!

Organic Wedding Cake Co. – Have fun and enjoy the moment and all the attention! Don’t stress over things on the day, it’s a good idea to have an itinerary but in my experience once everyone has had a few drinks, once the wedding breakfast has finished things tend to go a little array… Just go with the flow and it’ll be ok.

What’s the best/most original idea you’ve ever seen at a wedding?

White Rose Cake Design – I see so many different weddings as everyone likes to make their day so personal to them and I love to see all the personal touches people include.

Blossom Tree Cake Company – We made a cake this year for a fabulous Mexican-inspired wedding with bright colourful piñata decorations.

Organic Wedding Cake Co. – It definitely has to be a wedding I did at the Royal Festival Hall in London in 2016, the wedding theme was countryside in the City.  The bride was artistic director for one of the London theatres so of course she was going to bring some amazing ideas to the reception which was held on the 6th floor overlooking the Thames and London Eye, I never expected to walk in to set up the cake and find the entire floor had been covered in astro-turf and they had brought in potted trees and plants, picnic tables and benches to give it an outdoor feel… It was amazing!

Spending all day looking and talking about wedding cake sounds like a dream, so what’s the best part about your job?

White Rose Cake Design – It’s such an honour to be a tiny part of possibly the biggest day in someone’s life!

Blossom Tree Cake Company – I really love creating beautiful sugar flower work and perfectly finished sharp edges on our cakes. Absolutely the best part of all though, is when our couples give us their feedback and let us know how much they loved their wedding cake and how perfect it was for their special day.

Organic Wedding Cake Co. – The lovely feedback I get from customers, who say the cake was such an important and special part of their day.  When you think about someone’s wedding day, the cake plays quite a small role but the cake cutting is where everyone comes together to fulfil a very traditional part of the day.

Any final parting words of bridal wisdom?

White Rose Cake Design –I always tell my brides and grooms that it’s your day, so have whatever you want. Your day, your way, right?!

Can we lick the bowl before we go?

White Rose Cake Design – Yes!

Blossom Tree Cake Company – We wouldn’t recommend licking the bowl, but if you pop round on a Wednesday there are usually plenty of freshly baked cake trimmings ahead of weekend weddings!
