Summer is finally here, that means unearthing the BBQ… which is trapped somewhere at the back of the shed next to the exercise bike we promised we would finally put into action, behind the real bike that only made it onto the road once, under the sit-up mat that was going to be deployed every night at 8pm without fail… but then it clashed with Britain’s Got Talent and the tennis racquet, which one day WILL make it out of the bag it came in.

Yep, we’re going to be healthy, grill chicken and prawns with heaps of salad and wash it down with healthy(ish) summer cocktails! Ok so they’re not healthy but surely all that fruit juice has to count towards one of our five a day? Nope? Well they’re still going to taste good and be the perfect accompaniment to an afternoon spent with friends or planning the forthcoming hen party. Most people get scared of making cocktails but they really couldn’t be easier so here’s 12 flavours of summer that are easy to make and even easier to drink.

Please note; for measuring we’ve indicated measures as “parts” (pt) to make it easier to work your measurements depending on whether you’re mixing single drinks or making jugs for sharing.


Sex on the Beach

  • 1 pt vodka
  • 1 pt peach schnapps
  • 2 pts cranberry juice
  • 2 pts orange juice

Pour vodka and peach schnapps into a cocktail shaker with crushed ice. Shake and pour into a highball glass over ice. Fill the glass with equal measures of cranberry and orange juice.

Safe Sex on the Beach

A great non-alcoholic version for non-drinkers or those driving. Pour over ice in a chilled glass and stir. Garnish with a cherry.

  • 2 pts cranberry juice
  • 2 pts grapefruit juice
  • 1 pt peach juice
  • 1 cherry or blackcurrants

Pour the ingredients over ice and garnish with a cherry or blackcurrants.

Baileys Summer Chill Smoothie

  • 2 pts Bailey’s Irish cream
  • 1 banana chopped
  • 1 scoop Coffee ice cream
  • ice

Add all the ingredients to a blender. Pulse until blended and pour into a tall glass. Find a suitable spot in the garden and demand the hunky fellow you who cleans the pool is dispatched with a plate of prawns and a fan.

Summer in Naples

  • 2 pts oz Amaretto liqueur
  • 3 pts cranberry juice
  • 1 pt lemonade

Shake the Amaretto and cranberry juice with ice cubes in a cocktail shaker. Pour over ice, add splash of lemonade to fill the glass. Garnish with a slice of orange.


  • 1 pt rum
  • 1 mint leaf
  • 1 tbsp sugar
  • lime juice
  • soda water

Place mint leaves in bottom of a shaker, add crushed ice, rum, sugar, and lime juice, and muddle. Pour into a glass and add soda water. Garnish with mint leaves.

Jamaican Rum Punch

  • 1 cup of Bacardi rum
  • 1/2 cup dark rum
  • 1/4 cup Malibu
  • 2 & 1/2 cups pineapple juice
  • 2 & 1/2 cups orange juice
  • 1/4 cup lime juice
  • 3 tbsp grenadine syrup
  • ice

Pour all the ingredients into a punch bowl with ice. Add a ladle and fruit pieces. Keep those helping themselves freely away from the BBQ or any other naked flames.

Long Island Ice Tea

  • 1 pt gin
  • 1 pt vodka
  • 1 pt rum
  • 1 pt tequila J
  • 1 pt triple sec
  • 1 pt sweet and sour mix
  • Top with cola
  • 1 wedge lemon (optional)

Add ingredients into a cocktail shaker with, shake vigorously and pour. Please note this is a BIG hitter so go easy on the measures.

Caribbean Breeze

  • 1 pt Bacardi rum
  • 1 pt Malibu
  • 1 pt pineapple juice
  • 1 pt cranberry juice

Pour the rum and Malibu into a tall glass over ice. Add the fruit juice and stir. Sip through a straw under the shade of a coconut tree. Or gazebo.

Champagne Martini

  • 2 pts Champagne
  • 1 pt Cointreau  (or orange liqueur)

Pour ingredients into a chilled martini glass.

Woo Woo

  • 1 pt peach schnapps
  • 1 pt vodka
  • 2 pts cranberry juice

Pour all ingredients into a tall glass over ice cubes, stir, serve, make appropriate “Woo woo!” noises.


  • 2 pts cachaca
  • 2 tsp granulated sugar
  • 1 lime

Top with lemonade if needed Slice the lime into wedges and muddle the sugar into a strong glass or wooden bowl. Pour into a glass, stirring well and add ice and lemonade (optional).

Tequila Sunrise

  • 2 pts tequila
  • 2 dashes grenadine syrup
  • Orange juice
  • Ice

Pour tequila over ice in a tall glass, and top with orange juice. Tilt the glass and pour grenadine gently down the inside of the glass so it settles at the bottom of the rink creating the “sunrise” effect.
