*Stop press! Champagne is actually an English invention? English physician Christopher Merret documented the addition of sugar to Champenois wine which created a second fermentation and made the drink fizz and sparkle. All this was recorded and presented to the Royal Society in 1662, six years before Dom Perignon ever spotted the drink and 40 years before the Benedictine Monks claim to have invented the drink.
But don't tell your hosts, they get rather upset about it.
